Spring Salad Inspiration

Spring brings many wonderful things… warm weather, longer days, shorter nights, April showers, May flowers, and so many colorful and delicious vegetables.  When all the bright colors start hitting the produce section of the grocery I start to crave a good salad.  One loaded with lots of goodies, not a plain and boring iceburg lettuce, some carrots, shredded cheese and huge glob of dressing kind of salad.  If you really want to celebrate spring, do it by making a bright and colorful salad.
